So here goes.....
Lolo's Salsa
aka
"Crazy" Salsa
{"crazy" as in CRAZY good!}
Ingredients:
(1) 27 ounce can tomato sauce*
(2) 7 ounce-ish cans of tomato sauce*
(* the brand I use is a Mexican tomato sauce called El Pato in a yellow can)
(* the brand I use is a Mexican tomato sauce called El Pato in a yellow can)
medium white onion
2 whole jalapenos
1 serrano chile (he's a small lil guy)
4 cloves garlic (peeled)
1 bunch green onions
3-4 fresh tomatoes
(or 1 10 ounce can diced tomatoes-drained)
cilantro bunch
1 tbspn whole cumin seeds
lime
garlic salt
2 avocados-diced
salt and pepper to taste
Trader Joe's Organic White Corn Chips
(these are my fav!)
You will need:
Blender
small cutting board
large bowl
canning jars
** no cuts
(**you will find out if you have any when you add the lime!)
Ready?
Lets make Salsa!
Step #1:
Open the large can of tomato sauce and pour half of it in the blender
You will add:
- half of the white onion (roughly chopped)
- jalapenos & serrano chile (stems off - roughly chopped)
- garlic cloves (peeled - i use the already peeled ones from TJ's)
- cumin seeds
- garlic salt and pepper
Step #2:
Blend thoroughly until all ingredients are finely chopped
(approx 10 seconds)
Pour into big bowl
Step #3:
Add other half of large can of tomato sauce to blender
then add:
- other half of white onion (roughly chopped)
- green onions (roughly chopped with some of the green stems)
- bunch of cilantro (cut off stem bunch)
- 2 small cans of tomato sauce
Step #4:
Blend on PULSE (quick chop action)
(approx 5-6 pulses)
All ingredients should be roughly mixed and visible (not blended)
Add to big bowl
Step #5:
To big bowl add:
- either canned diced tomatoes (drained), or fresh diced tomatoes,
- avocados (diced)
- juice of the lime
- salt and pepper to taste
Step #6:
Slowly stir in diced avocados
then open a bag of chips and call hubby in to taste-test
(seriously, thats his job!)
It is addicting
Addicting in the sense that you will find yourself drinking it
Not kidding
It has happened
On numerous occasions
Good thing it is virtually fat free
But dont say I didnt warn you.......

I like to put my salsa in canning jars to put in the fridge
or to give as gifts
{everyone loves getting my salsa!}

Ok...can I just say how much I loved your disclaimer...too cute! And thanks so much for the recipe...I've been on the lookout for a good salsa one. Oh...and I received your email...I'll email you as soon as I get the towels done ;o)
